Breakfast “Coffee” Cake

My mom has been making this recipe for as long as I can remember. It’s one of my favorite breakfast treats. I mean, who wouldn’t love some sugar and cinnamon in cake form for breakfast?! I’m not sure why it’s called coffee cake since it doesn’t have any coffee in it. Maybe because you pair it with coffee so it’s acceptable to eat as breakfast?

 

Breakfast “Coffee” Cake

Cake:
1 cup sour cream
1/2 tsp baking soda
2 eggs
1 cup sugar
1 1/2 cups gluten-free all purpose flour
2 tsp baking powder
1 tsp salt

Topping:
1/8 cup sugar
1/8 cup brown sugar
1/2 tsp cinnamon
1/2 stick hard butter

 

Heat oven to 350. Combine sour cream, soda and eggs; beat well. Add sugar, flour, baking powder and salt. Beat until combined. Spread into lightly greased 8×8 pan. Mix topping ingredients except butter. Sprinkle topping over cake. Cut hard butter into pieces and spread evenly over cake. Bake for 50 minutes.

 

This recipe can easily be doubled to feed a larger group. Use a 9×13 pan and double all other ingredients.
