BBQ Chicken Pizza

It’s national pizza month! Although I don’t need an excuse to have pizza, there’s no better time to make my favorite pizza than in celebration of the month. According to the leading authorities, 94% of Americans consume pizza once a month. BBQ chicken pizza is our favorite to make at home. It’s easy and delicious. Bonus points for adding a glass of red wine!

 

BBQ Chicken Pizza

Whole wheat pizza dough (Whole Foods and Trader Joe’s have good options)
1-2 boneless, skinless chicken breasts, chopped
1/2 red onion, sliced into 1/4 circles
1 cup shredded smoked gouda
1 cup shredded cheddar
BBQ sauce

 

Heat oven to 415. Sauté chicken and onion over medium-high heat. When finished, add enough barbecue sauce to coat (my personal favorite is Sweet Baby Ray’s). Stir and set aside.

Roll out dough into circle or the shape you desire. If you don’t have a pizza stone, you can use a cookie sheet. I cover with parchment paper for ease of cleanup. Add a little olive oil to pizza stone or cookie sheet. It’s also helpful to have a little on your hands when you’re rolling out the dough to prevent it from sticking.

Cover dough with barbecue sauce and then a thin layer of cheese. Add chicken mixture. Top with remaining cheese. Bake for 15-20 minutes. Let cool for 5 minutes, slice and enjoy!
